ESPRESSO-LEMON PANNA COTTA

I love the pairing of espresso and lemon in this sleek layered panna cotta—the lemon flavor softens the bitterness of the espresso and adds a fresh flavor. Make sure that the agar agar flakes are completely dissolved before pouring the mixture into the glasses. If they aren’t, they will sink to the bottom and the dessert won’t set up properly.

SERVES 4

LEMON LAYER:

1 cup (232 g/8.18 oz) soy creamer

1 cup (242 g/8.5 oz) soy milk

¼ cup plus 2 tablespoons (81 g/2.8 oz) packed light brown sugar

2 teaspoons (8 g/0.3 oz) vanilla extract

½ teaspoon (1 g/0.03 oz) lemon zest

Pinch of freshly grated nutmeg

2 teaspoons (4.5 g/0.16 oz) agar agar flakes
