Peel potatoes and cut into 1/2-inch cubes, dropping cubes into cold water to prevent browning.
In large skillet, heat oil over medium-high heat. Drain and pat potatoes dry and add to skillet. Stir to coat with oil. Stir in garlic and sage, reduce heat to low, and cover and cook until tender, about 15 minutes, stirring occasionally.
Uncover, increase heat to high, add duxelles and cook, stirring frequently, 5 minutes. Season to taste with salt and pepper. Transfer to serving dish and garnish with sage leaves.
Serves 6.
