Garlic Roast

Ingredients:

½ cup onion, chopped

2 cups water

¼ teaspoon xanthan gum

1 teaspoon garlic powder

3-pound chuck roast, boneless

¼ cup balsamic vinegar

Parsley, chopped to garnish

1 teaspoon pepper

1 tablespoon kosher salt

Directions:

Slice your roast in half and season with the garlic, pepper, and salt.

Arrange your Instant Pot over a dry, clean platform. Plug it in power socket and turn it on.

Now press “Saute” mode from available options. In the cooking area, add the meat; cook to brown.

Add the onion, water, and vinegar. Stir gently.

Close the lid and lock. Ensure that you have sealed the valve to avoid leakage.

Press “Manual” mode from available cooking settings and set cooking time to 35 minutes. Instant Pot will start cooking the ingredients after a few minutes.

After the timer reads zero, press “Cancel” and quick release pressure.

Carefully remove the lid. Carefully take the meat and make chunks.

Set the pot back on sauté; boil the mix for around 10 minutes.

Mix the gum and mix the shredded meat. Serve the prepared keto dish warm!
