There is something utterly, comfortingly, reassuringly and irresistibly enticing about a well-made stew or casserole. There are few people (vegetarians excluded) whose mouth doesn’t water at the prospect of a lovingly cooked, dark-sauced, tender and savoury beef stew, spooned over a cushion of buttery mash.

Stewing, or in other words cooking meat (usually) with vegetables and aromatics in a liquid for a fairly lengthy amount of time, is easy but not quick. Despite this, I think of stews as remarkably convenient. You see, once you’ve browned the meat and got all the ingredients into your casserole, burbling away gently in or on the stove, you can wander off and get on with something completely different. An occasional stir is all that is required of you for some time to come. And there’s more. Most stews actually benefit from being made in advance, then reheated, say, a day later. Finally, the added bonus is that it is often the cheaper cuts of meat (particularly beef or lamb) that make the best stews.
