Baked Chicken Cacciatore

For 4 For 50

One 3-pound chicken, cut into 8 pieces 13 chickens

Salt and freshly ground pepper2 tablespoons olive oil About 1 cup

2 green bell peppers, cured,seeded, and cut into narrow strips 26

1 large onion, thinly sliced 13

8 ounces mushrooms, trimmed and quartered 6 pounds

2 garlic cloves, finely chopped 12

2 cups canned Italian peeledtomatoes, drained and chopped Six 28-ounce cans

1 teaspoon dried oregano 1/4 cup

Preheat the oven to 4500F. Oil one or more roasting pans, to hold the chicken pieces in a single layer.

Rinse the chicken and pat dry. Arrange the pieces skin side down in the pan(s). Sprinkle with salt and pepper. Bake the chicken for 30 minutes.

Turn the chicken pieces and sprinkle the skin side with salt and pepper. Bake for 20 minutes more, or until lightly browned.

While the chicken cooks, in one or more large skillets, heat the oil over medium heat. Add the peppers, onions, and mushrooms in a shallow layer. Cook, stirring frequently, until the vegetables are tender and lightly browned, about 15 minutes.

Stir in the garlic and cook for 2 minutes. Add the tomatoes, oregano, and salt and pepper to taste. Bring to a simmer and cook until the sauce is thick, about 30 minutes.

Spoon off some of the fat from around the chicken. Pour the sauce and vegetables over and around the pieces. Bake 20 minutes longer. Serve hot.
