6. Fish Cakes

Ingredients:

12 oz = fresh Sole fillets

A few tbsp = cooking fat

2 = eggs

4 large = baking potatoes (peeled)

1 tbsp = Dijon mustard

Sea salt

2 = green onions (chopped)

Freshly ground black pepper

Method:

Put potatoes in a pan of boiling water and cook till smooth sufficient to mash.

Add salt and pepper to taste to the fillets.

Line a warm frying pan with cooking fat on a medium heat. Include the fillets and cook on both sides till they are golden brown and cooked fully. This should only take a couple of minutes, as Sole cooks fairly rapidly when prepared using this method. It doesn’t matter if the filets crack apart while in the cooking process.

As soon as the potatoes are cooked fully, strain the unwanted water and mash them in a big dish.

Include the fillets to the potatoes and split the fish apart with a fork while combining it into the potatoes.

Combine the eggs, mustard and onions in with the potatoes and fish and season the mixture to taste.

Transform the mixture into various thick cakes.

In a warm frying pan, melt enough cooking fat to nicely cover the base of the pan.

Put the patties/cakes to the warm frying pan and cook on each side till crispy.
