Mushroom + Beef Stew
The hunks of beef for the stew were the most gorgeous red when I took them out of the butcher’s paper. I felt a huge surge of pride at securing such beautiful meat—I had snagged it from my friend Chris. It was meat from his own cows. As I tipped the meat into the pot of shimmering oil, I felt a buzz of happiness. I shook the juices that had collected in the paper into the pot. I didn’t want to waste anything! My happiness, though, faded as that red meat slowly turned gray. Instead of searing the meat, I had braised it. I made a big mistake by adding liquid to the pot as the meat was browning. Though the stew’s rich, mushroomy sauce masked my error, the beef lacked a special hearty roastiness. I felt like I’d let down that animal—and my friend the gentleman farmer.
Now I know to keep beef as dry as possible when it goes in the pot. I’ve also amped up the mushrooms for the stew and held back on the beef, making this a somewhat lighter but supersatisfying winter dish. Star chef Daniel Boulud, who is a whiz with one-pot meals, gave me some additional suggestions.
