Cool Carrot Peeling Trick

In almost every class that I teach, I demonstrate a two-sided peeling technique, which works best with a swivel-style peeler. Carrots are perfectly shaped for this technique (parsnips too), but the surfaces of most other vegetables are too irregular.

Most people peel their carrots in single strokes, either drawing the peeler away from their body, or toward it. Since the peeler has a blade on both sides, the nifty trick is to hold the carrot at one end, and keep the peeler on the carrot. Peel back and forth, while rotating the carrot, without lifting the peeler. You can peel the carrot in half the time. This is especially helpful if you’re a new line cook, as I was, and was instructed by the executive sous chef to peel a 25-pound bag of carrots. The task flew by with this cool technique.
