1/2 cup Heavy Cream

1/4 Onion - chopped

4 tbsp. Butter

2 cloves Garlic - minced

1 Bay Leaf

1/2 tsp. Freshly Minced Ginger

1/2 tsp. Pepper

1/4 tsp. Cinnamon

1/4 tsp. Coriander

1/8 tsp. Nutmeg

Salt

3 tbsp. Bacon Grease – for frying

Directions

1. Brown butter in a saucepan over low heat. Add the onions, garlic, and ginger to the pan and cook for 2-3 minutes.

2. Once onions are translucent, add the spices and stir well. Allow to cook for 1-2 minutes, then add pumpkin and chicken broth into the pan.

3. Bring the mixture to boil, then reduce to low heat. Allow to simmer for 20 minutes. Place the mixture in a blender to puree until smooth. Return the mixture to the pan and allow to simmer for another 20 minutes.

4. Meanwhile, cook 4 slices of bacon.

5. Once the soup is done, add the heavy cream and bacon grease and mix. Crumble bacon over the top and add chopped parsley and 2 tbsp. sour cream.

6. Serve immediately and enjoy!
