METHOD

Grind to paste green chillies, coriander leaves, mint leaves and salt.

Heat oil in a pan and fry the onions till golden brown. Lower the heat and add garam masala, ginger-garlic paste and fry for two to three minutes. Lower the heat and add the chicken pieces. Fry for another two or three minutes. Now add turmeric powder and ground chilli paste and fry till the pungent smell of the raw chilli from the mixture diminishes. Add curd and cook till the oil floats on top. Add one or two cups of water and cook till the chicken is done. Then mix the cashew paste and fry till the gravy thickens and the oil floats on top.

Serve hot with rice or chapatis.
