Chives

Clove Pinks, Pinks, Carnation, Gillyflower (Dianthus caryophyllus)

Perennial hardy to 10 degrees Fahrenheit; may be grown as an annual. Thin, gray-blue leaves form 12-inch mounds with 18-inch stems of edible red, pink, or white flowers in spring. Full sun. Standard potting mix; keep evenly moist and fertilize regularly. Start from transplants for bloom the first year. Growth is best in the cool weather of spring and fall. Remove faded flowers to encourage additional blooming. Grow in 12-inch pots or in mixed plantings, placing them toward the edge to the middle of the planter. Use flowers when available.

Indoors: Not recommended unless with very bright light and very cool temperatures.

Coriander, Cilantro (Coriandrum sativum)

Hardy annual. Flat, parsleylike leaves on floppy stems to 24 inches with open clusters of tiny pink-white edible flowers. Full sun. Standard potting mix; keep soil evenly moist and fertilize regularly. Start from seeds, sown directly into a 12-inch pot; make successive plantings every month as plants mature quickly; self-sows. Grows well in a cold frame during the winter. Use leaves or flowers anytime available; cut off seed heads when brown, but before they are open.

Indoors: Bright light and cool temperatures. Start seeds in the fall for winter indoors, making successive plantings. Will not mature to flowers in winter months.
