Fireweed Jelly

Makes: About 12 ounces

Ingredients:

For fireweed tea:

• 4 cups tightly packed fireweed flowers, rinsed initially

• 1 ¾ - 2 cups water or as required

For fireweed jelly:

• 2 cups organic cane sugar

• 1 ounce powdered pectin

• 1 ½ cups fireweed tea

• ¼ cup lemon juice

Directions:

1. To make fireweed tea: Place fireweed flowers in a saucepan.
