Cucumber Pickles

Fermented pickles are a low-calorie food rich in vitamin K but also high in sodium, so they should be eaten in moderation. Herbs and spices, such as dried dill weed and peppercorns, can be added to the brine to enhance the pickles’ flavor.

1 gallon (4 L) filtered water

8 ounces (227 g) table salt or sea salt, or 10 ounces (284 g)

kosher salt

Pickling cucumbers, washed and ends trimmed

(the number needed will depend on the size of the pickles and the jar used)

Dried dill weed (optional)

Peppercorns (optional)
