What to Buy: A Cook's Guide to Green Basics

* The average distance traveled by food in the United States is 4,000-5,000 miles. Of course, the ultimate cookprint-shrinking strategy includes both local food and foods lower on the food chain, but the researchers' numbers speak volumes about the types of impact we can make through multiple strategies.

A World of Hurt: Healing Meat's Global Impact

Which causes more greenhouse gas emissions, rearing cattle or driving cars?

According to the United Nations Food and Agriculture Organization, the world's livestock sector generates more greenhouse gas emissions than does transportation (about 18 percent, as measured in CO2

equivalent).

It's also a major source of land and water degradation. The report calls for a drastic need to reduce livestock all across the planet. It notes in part:

* Global meat production will double from 229 million tons in 1999/2001 to 465 million ton in 2050, while milk output is set to climb from 580 to 1,043 million tons.

* Livestock are the main inland source of phosphorous and nitrogen contamination of the South China Sea, contributing to biodiversity loss in marine ecosystems.

* Meat and dairy animals now account for about 20 percent of all terrestrial animal biomass. Livestock's presence in vast tracts of land and its demand for feed crops also contribute to biodiversity loss; 15 out of 24 important ecosystem services are assessed as in decline, with livestock identified as a culprit.

The recommended industrial remedies range from improving livestock diets to recycling manure into fuel. But every person can make an impact, too. The most effective individual solution: eat less livestock and dairy.
