CURRIED FISH CAKES

8 ounces (225 g) cooked fish

2 tablespoons butter, melted

8 ounces (225 g) mashed potato

1 egg, lightly beaten

1 tablespoon chopped parsley

1 dessertspoon curry powder

Flour

Oil or butter for frying

Flake the fish, add melted butter, mashed potato, egg, parsley, and curry powder, and mix well to combine. Mold into flat, round cakes, dust with flour, and sauté in oil or butter until lightly browned on both sides.
