ON COLLECTING LAVENDER

From April to September, the flower is a source of delight for bees and other pollinating insects, striating the Provence countryside with its purple-blue streaks. The best lavender fields are to be found on plateaus located at altitudes of 600 to 1400 meters. The plant’s calixed flowers, whose essential oil has a wild and pungent scent, are harvested when the petals begin to wilt. The flowering tops are left to dry, mixed and hand-picked so as to remove all impurities. Lavender flowers are then distilled to produce what perfumers call an “extract,” and aromatherapists call an “essential oil.” They yield a potent floral water, and can also be crushed to a powder.
