Rose Hip Jelly

ROSE HIP JELLY is one of those things you don’t readily find in grocery stores. It’s too difficult to cultivate rose hips in any quantity, and the flavor of the jelly itself, though delicious, is something of an acquired taste. In fact, the word rose is misleading. The jelly doesn’t taste so much floral as it does earthy and acidic, a bit like dried hibiscus flower tea. This is in part due to its extraordinarily high levels of vitamin C (about twenty times as much as an orange), which makes this jelly, though sweet, not entirely unhealthful. With any extra hips, I like to make a simple tisane: just sliver the seedpods and steep in boiling water for a bright, tart, and nourishing brew.
