PICKLING MIXTURE
ΒΌ cup (65 ml) rice wine vinegar
2 tablespoons sugar
1 teaspoon soy sauce
1. Place the dried shiitake in a small bowl and pour in the 1/2 cup of boiling water. Cover with plastic wrap and let stand until tender, about 30 minutes.
2. To make the Pickling Mixture, combine the ingredients in a small bowl. Set aside.
3. Bring a small saucepan of water to a boil. Add the lotus root and cook for 2 minutes. Using a slotted spoon, immediately transfer the lotus root to the Pickling Mixture. (Do not discard the cooking water.) Let the lotus root pickle while preparing the remaining ingredients.
