Church Day
T here’s nothing a cup of coffee can’t cure and I can always count on it at my sister’s house. She has a single-cup brew maker, a ten-cup coffeemaker, an electric teakettle, and an assortment of sugars, creamers, hot chocolates, and other mixes on her countertop. A cup of coffee with the cherry turnover I traveled with all weekend was delicious even though it was just a sliver. My sister declined for the moment. It was Sunday morning at my sister’s house and Richard and I were up and ready to head out as usual.
Richard and I drove to church. We participate in leading groups, watching kids, and sometimes helping in meetings before or right after the service. Today after church, we had a meeting and I was unprepared for it. I didn’t realize we had one today. At these meetings lunch is usually served. I thought if we have sandwiches, I’d be done for—with submarine sandwiches and all the bread and meat that are supposed to be the healthier choice. A nice sandwich with a bag of chips is another one of my favorites. I would most likely give in to that, but it turned out it was El Pollo Loco with chicken, beans, rice, and salad. Perfect!
I did pick up a very small drumstick and cheated on that. Maybe it was the abundance of grilled chicken in two large bowls that got me. Regardless, I was without control on the chicken. Maybe if we were more prepared with our calendar I would have made our own lunch like some others do on their diets. Anyway, I poured the beans over my salad with two different types of salsa and the salad was good! I was happy with that, but the salad alone would have been fine.
Sunday night dinner was not happening. Even with that tiny piece of chicken leg, I was well fed and rested after spending a good Sunday evening on the couch. We thought about eating a little something anyway around 9 p.m. to avoid being famished, so I made appetizers. I brought out the two vegan spreads I bought at the farmer’s market: the garlic, orange, and ginger spread and the one made from beets. I was hoping Richard wouldn’t notice it was beets again, but he asked and I told him. He sneered all right even though he loved it a few days before.
We had rice crackers with the vegan dips and I also made two crab cakes that were no bigger than the size of a half deck of cards each. I read we should only have meat the size of a deck of cards. Well, we had crab cakes half this size and felt as if we were cheating. The crab cakes were our dinner too. It wasn’t a lot, but with the white wine we were fine. We’re not doing well on this new lifestyle. We’re cheating all the time. Something tells me we’re at least reducing the amount
