It’s a wonderful source of minerals and adds a savory flavor. Nori can be used as a wrap instead of tortillas or bread, or added to salads and other dishes.
Sweet Potato Yakisoba

COOK TIME: 10 MINUTES
EQUIPMENT NEEDED: SPAGHETTI AND RIBBON BLADES
Yakisoba is a popular Japanese fried noodle dish of pan-fried ramen with pork, vegetables, and sauce. This version combines elements of a classic yakisoba, but uses sweet potatoes instead of noodles and cabbage instead of meat.
2 tablespoons coconut oil
½ medium onion, thinly sliced
2 garlic cloves, minced
1-inch piece fresh ginger, grated
2 medium sweet potatoes, peeled, spiralized with the spaghetti blade
1 carrot, peeled, spiralized the spaghetti blade
¼ cup coconut aminos
½ head green cabbage, spiralized with the ribbon blade
2 scallions, white and green parts, sliced
Sea salt
Freshly ground black pepper
1. Heat the coconut oil in a large pan over medium heat. Add the onion, garlic, and ginger, and sauté for 1 minute.
2. Add the sweet potato and carrot noodles, and the coconut aminos. Cook for 5 to 7 minutes, stirring frequently, until the sweet potatoes are tender and just starting to brown.
3. Add the cabbage ribbons and scallions, cook for 1 to 2 minutes, and remove from the heat.
4. Season with salt and pepper. Serve hot.
