You don’t really have to prepare this at the table – but it’s flambéed! Why would you deny your guests (or yourself) this lovely bit of theatre? I don’t care how seasoned a diner you are, setting food on fire is always cool. In keeping with the Japanese theme, you may be tempted to use Japanese whisky for this. Don’t do it; Japanese whisky is too nice. Use peaty Scotch of average quality – a blend will do.
