Step one Preheat the oven to 180°C/350°F/gas 4.

Step two Remove any fat from the lamb. Season each steak on both sides with salt and black pepper, then dry-fry in a non-stick frying pan over medium heat until sealed.

Step three Place the steaks in an ovenproof dish and cover with the onion and garlic. Sprinkle the herbs on top and cover with the sliced potatoes. Season well, then add the lamb stock. Cook in the oven for 1 hour.

Step four When the lamb is cooked, blend the cornflour with a little water and use to thicken the stock. Garnish with chopped parsley and serve immediately with a selection of fresh vegetables.
