Spiralized Veggie with Quinoa
A nutritious recipe you will continuously be making throughout Fall and Winter. Very quick and easy to make.
Serves: 2
Time: 45 mins.
Ingredients: • 3 teaspoons of sesame oil
• ⅓ cup of quinoa, dry
• 1 cup of water
• 1 cup of bean sprouts
• ½ large carrot, peeled and spiralized
• 1½ cups of mushrooms of your choice
• 2 cups of spinach
• 2 eggs
• Salt, to taste
• 1 large zucchini, spiralized
• 1 teaspoon of minced garlic
• Sriracha for garnish
Directions: 1. Place the quinoa into a large pot filled with salted water. Cover pot and allow to boil over medium-high heat. Once boiled, reduce to a simmer for around 10 to 15 minutes or until it becomes fluffy. Fluff, using a fork, then transfer in a bowl, set aside.
2. Meanwhile, heat 1 teaspoon sesame oil over medium heat and cook carrot noodles for around 2 minutes. Season with salt and continue cooking until it becomes soft. Set aside.
3. Cook the bean sprouts on the same pan, seasoning with salt, for around 2 minutes. Once cooked, set aside.
4. Add another teaspoon of oil, then cook the mushrooms and season with salt. Cook for around 3 to 5 minutes, then set aside.
5. On the same pan once again, add remaining sesame oil and cook spinach with garlic for around 3 minutes or until spinach is wilted, then set aside.
6. Do the same thing with the zucchini noodles, cooking for around 3 to 5 minutes or until cooked according to your preference. 7. Meanwhile, cook eggs according to preference. For example, heat oil in a pan over medium heat, then crack the eggs into the pan. Cook until the tops of all the whites are set but let the yolk remain runny. Take the pan from off the heat and use a spatula to remove the eggs.
8. Assemble all the veggies in bowl. Top it with the cooked egg and drizzle with a bit of sriracha. Serve.
