For the Crust

2½ cups (6 oz/185 g) finely ground gingersnap cookies

¾ cup (5 oz/155 g) finely ground walnuts

¼ cup (2 oz/60 g) granulated sugar

5 tablespoons (2½ oz/75 g) unsalted butter, melted and cooled

For the Filling

1 lb (500 g) full-fat cream cheese, at room temperature

¾ cup (6 oz/185 g) firmly packed light brown sugar

2 large eggs

3⅓ cups (26½ oz/830 g) Roasted Pumpkin Purée (see recipe)

½ cup (4 fl oz/125 ml) heavy cream

1 teaspoon ground cinnamon

½ teaspoon ground ginger

½ teaspoon ground nutmeg
