GREENS WITH BEANS
Leafy greens and high-protein beans are a compatible duo, with so many ways to vary the combination.
The most basic way to prepare a simple, satisfying dish of greens and beans is to start with the recipe for Simple Garlicky Greens. When the greens are about halfway done, you can mix in cooked or drained canned beans, along with the other ingredients and seasonings, at the same time. Continue cooking the greens until they are as tender as you like and the mixture is heated through. Here are some variations on the theme, ingredients that add a distinctive, regional style to greens and bean combos:
ITALIAN: White beans, tomatoes, parsley, and basil (particularly good with chard)
INDIAN: Kidney beans or lentils, curry spices, and cilantro (a hit with spinach or mustard greens)
SOUTHWESTERN: Pinto or black beans and fresh hot or mild chili peppers or a prepared salsa (delicious with any kind of greens)
CREOLE: Black-eyed peas or small white beans, tomatoes, fresh basil, and fresh or dried thyme (especially tasty with collard greens or any variety of chard)
