Cock-a-Leekie Soup

One-pot wonder.

Ingredients

400–500g chicken thighs, bone in, skin removed

2 tbsp olive oil

2 leeks (approx. 500g once trimmed), chopped

1 stalk celery, diced

sprig fresh thyme, or ½ tsp dried thyme

small bunch of fresh parsley, chopped

1L vegetable or chicken stock

75g pearl barley

4 prunes, stones removed, chopped (optional)

salt and pepper

Method

Brown the chicken pieces on all sides in the oil in a large pot, over a medium heat.

Add the leeks, celery and a good pinch of salt, soften for a few minutes.

Add the thyme, half the parsley, stock and the pearl barley to the pan. Bring to a simmer, then put on lid and simmer for 45 minutes. Stir occasionally.

Add the prunes, if using, 5 minutes before serving.

Taste and season. You can serve as is, or take out the chicken, remove the bones, then put the meat back in the soup.

Sprinkle with the rest of the parsley and serve.
