Heat coconut oil in a frying pan and fry bacon until brown and cooked through.

I have always been a fan of quick and tasty dinners with a unique twist. This hits that brief exactly. Compared to rice cauliflower is higher in potassium, fiber, and vitamins C and K. It also has a lower glycemic index, which means it doesn’t spike your blood sugar as much as rice does.
