Ingredients

2 C. uncooked brown rice

1 C. carrots, chopped

4 C. water

1 C. yellow squash, chopped

1 tbsp safflower oil

sea salt to taste

1/3 C. leeks, chopped

2 cloves garlic

1 tsp minced fresh ginger root

1 C. zucchini, chopped

Directions

1. In a large pan of the water, add the rice on high heat and bring to a boil.

2. Reduce the heat to medium-low and simmer, covered for about 45-50 minutes.

3. In a skillet, heat the safflower oil on medium heat and cook the leeks, ginger and garlic for about 5 minutes.

4. Stir in the zucchini, carrots, yellow squash and salt and stir fry for about 2 minutes.

5. Serve over the brown rice.
