Mushroom Spinach Risotto

Total time: 20 minutes

Servings: 4

Nutritional Information: calories 325; carbs 45g; protein 10g; fat 10g

Ingredients:

2 cups of chopped spinach

1 cup of sliced mushrooms

1 cup of rice

2 cups of vegetable stock

½ cup of vermouth

½ cup of shredded Parmesan cheese

1 tablespoon of olive oil

1 shallot (chopped)

1 zucchini (chopped)

1 teaspoon of minced garlic

Directions:

Set the Instant Pot to SAUTÉ, add olive oil and let it hot, add garlic and shallots and sauté for 2 minutes. Add the mushrooms and sauté for another 2 minutes.

Add vegetable stock, rice and the rest of the ingredients, except cheese. Close the pot, set to RICE and cook on high pressure for 8 minutes.

Do a quick release when the timer beeps. Serve hot.
