*Having discs of pastry in the freezer is never a bad thing. I highly recommend doubling the tourtière filling to make two meat pies, but thatâs just me. Use the remaining discs of dough for pies, quiches, or galettes.
*Tourtières freeze very well. After they are assembled, do not brush on egg wash. Wrap tightly in plastic wrap, cover with aluminum foil, and freeze for up to 2 months. Thaw in the refrigerator overnight, then brush with egg wash and bake as above.
*Try serving with pickled beets, relish, cranberry compote, rhubarb chutney, or sour cherry preserves.
