Add the pepper, mixing well and pour in the can of black beans. Crush a few of the beans using a fork or a wooden spoon. This will give the soup a thicker and creamier texture.

Pour in the vegetable stock and bring mixture to a boil.

Reduce to a simmer then add balsamic vinegar and chopped coriander. Allow to simmer on low for 10 minutes for the flavours to marry.

Add the avocado then serve immediately while hot.
