Directions

In a large saucepan heat olive oil then saute onions until tender, around 3-4 minutes. Add the cinnamon, paprika, chili powder, cayenne pepper, garlic and cumin seeds and fry for 2 minutes.

Stir in tomato puree and cook for a further minute. Add tomatoes, sugar and lemon juice and stir thoroughly.

Add the butternut squash, carrots, beans, stock and seasoning and mix well. Bring to a boil then reduce to a low simmer and leave to cook for 1 hour or until the stew has reduced and thickened.
