1 teaspoon ground cumin

½ teaspoon ground turmeric

4 tablespoons peanut butter

1 ½ cups vegetable broth

2 tablespoons peanuts for garnishing

Directions

1. Place a large pot over medium heat, add oil and when heated, add onions.

2. Cook for 3 to 5 minutes or until tender, then add ginger and garlic and cook for 2 minutes or until fragrant.

3. Add remaining ingredients except for peanuts and peanut butter and stir until well combined.

4. Increase heat to a high level, bring soup to boil, lower heat to medium level and simmer the soup for 15 minutes or until vegetables are cooked through, covering the pot and stirring occasionally.

5. After 15 minutes, stir in peanut butter until combined and taste the soup to adjust seasoning.

6. Top with peanuts, then ladle soup into serving bowls and serve.
