Lunch Recipes

Tofu Tacos

Ingredients:

1 tsp olive oil

1/2 cup firm tofu, crumbled

1/2 onion, chopped

1/2 tsp garlic powder

1/2 tbsp chili power

1/8 tsp dried oregano

1/2 tbsp light soy sauce

1/8 tsp cumin

3 corn tortillas

2 tbsp tomato sauce

1 cup lettuce, shredded

1/4 cup tomato, chopped

1/4 cup green onion

2 1/2 tbsp salsa

Directions:

Place a frying pan over medium heat. Once hot, add the oil and swirl to coat.

Sauté onion until translucent. Stir in tofu, onion, garlic powder, chili powder, oregano, soy sauce, and cumin. Stir until the tofu is crumbly.

Pour tomato sauce. Reduce to low flame. Sauté until liquid has evaporated.

Heat tortillas in a dry, nonstick frying pan. Transfer to a plate. Spoon tofu filling in the center and add lettuce, tomato, green onion, and salsa. Roll up and serve.
