Rhubarb Bread

Makes: 2 loaves

Ingredients:

For dry ingredients:

● 3 cups all-purpose flour

● 1 teaspoon baking powder

● 1 teaspoon baking soda

● 2 cups sugar + extra to top

● ½ teaspoon salt

● 1 cup finely chopped walnuts

Other ingredients:

● 5 cups finely chopped rhubarb + a little of the stalk to garnish, slivered

● 4 flax eggs

● 1 cup avocado oil or olive oil

Directions:

1. Add rhubarb into a saucepan and place it over medium-low heat. Stir occasionally and cook until very soft and with very little liquid left in the saucepan. Turn off the heat and let it cool.

2. Grease 2 loaf pans of 9 inches each with some cooking spray. Dust with a little flour as well.

3. Combine dry ingredients in a large mixing bowl.

4. Whisk together flax eggs and rhubarb in another bowl. Pour it into the bowl of dry ingredients and stir until well incorporated.

5. Divide into the loaf pans. Scatter rhubarb stalk on top. Scatter some sugar on top.

6. Bake in a preheated oven at 350° F for about 50 – 60 minutes. Do the toothpick test.
