OATMEAL CRANBERRY COOKIES

1 stick butter, softened

1 cup dark brown sugar

1 egg

2 teaspoons grated orange zest

1½ cups rolled oats

1½ cups all-purpose flour

½ teaspoon baking soda

1 teaspoon cinnamon

½ teaspoon salt

1 cup dried cranberries

Preheat oven to 400 degrees F. Coat baking sheets with butter or spray.

Cream together butter and sugar until fluffy. Add egg and orange zest, and beat to combine.

In another mixing bowl, combine oats, flour, baking soda, cinnamon, and salt. Add to the butter mixture and beat at low speed just to combine. Stir in cranberries. Drop by generous tablespoonfuls on prepared baking sheet. Bake 10 to 12 minutes, until edges are golden brown. Transfer to racks to cool, and store in zipper lock bags.
