Vegie Kabobs

I love these purple potatoes – how fun to eat something naturally purple! When cubing the vegies, try to get them all about the same size so they’ll cook evenly.

1/2 yam, peeled and cubed

~8 oz butternut squash, peeled and cubed

2-3 small purple potatoes, peeled and cubed

2-3 small red-skinned potatoes, peeled and cubed

olive oil

salt and pepper to taste

Place cubed vegies in a baking dish and lightly drizzle with olive oil, add salt and pepper and mix well. Bake at 400 degrees for 50-55 minutes, or until soft. Allow vegies to cool for a few minutes, then carefully place on wooden skewers, alternating colors. Serve with your favorite dipping sauce.

You can add your favorite pesto sauce, or Garlic and Lemon Dipping Sauce found under Sauces (pesto usually has cheese in it, so use the Garlic and Lemon Dipping Sauce if you’re avoiding dairy and cholesterol).
