RED CURRANT MUFFINS

Tart wild currants make perfect residents for these exceptional whole-grain muffins.

Dry ingredients

3 ⅓ cups (1 pound) sweet brown rice flour and 2 cups (½ pound) oat flour, or 1½ pounds any whole-grain flour

½ cup plus 2 tablespoons freshly ground flaxseeds (¼ cup seeds)

1 tablespoon ground cinnamon

2 teaspoons freshly ground coriander seeds

1 tablespoon freshly ground fennel seeds

2 teaspoons cream of tartar

1 teaspoon baking soda

1 teaspoon salt
