To make the tartar sauce: Stir together the mayonnaise, relish, mustard, lemon juice, and dill in a small bowl. Season with salt and set aside.

To make the fish sticks: Season the cod with 2 teaspoons of the salt. Combine the almond flour, tapioca flour, garlic powder, and remaining 1 teaspoon salt in a large bowl. Beat the eggs in a medium bowl. Dredge the cod in the beaten eggs, letting the excess drip off, then roll in the flour mixture to coat completely. Set the fish sticks on a wire rack.

Line a plate with paper towels and place it near the stovetop.

In a large skillet or Dutch oven over medium heat, melt the coconut oil. When the oil is hot, working in batches, add the fish sticks to the skillet and fry until the crust is a light golden brown and the fish is cooked through, 2 to 3 minutes per side. Transfer the cooked fish sticks to the paper towel–lined plate to drain and season with salt.

Serve the fish sticks with the tartar sauce on the side.
