Teriyaki-Glazed Crispy Tofu with Green Beans

If the story of tofu acceptance at my family’s dinner table were a movie, the climactic scene—run in slow motion and set to orchestral music—would be the night I made this recipe. More specifically, it would be the moment Abby picked a golden-glazed cube out of the pan and said to me, “Are you sure that’s enough for all four of us?” (Translation: I like this very much, and I need to make sure I eat a lot of it in the immediate future.) I tried to play it cool and assured her we’d be just fine. Then I proceeded to watch her eat everything on her plate. Who knows if it was the Teriyaki speaking (as I’ve mentioned, the sauce has a powerful hold on my family), but it’s more likely because the tofu is dredged in cornstarch before being fried and glazed, resulting in a universally crowd-pleasing crisp-tender tofu cube. Serve this right away so the tofu retains its crispiness, either alone or with white rice. Also, I like the French beans because they are skinnier (thus quick-cooking) and usually more flavorful.
