Vegan Cauliflower al Pastor Tacos

I. Love. Cauliflower. It’s a favorite stand-in for meat and one that I can’t help ordering every time I see it on a menu. Here, we have incorporated traditional al pastor flavors to make something which is a little bit sweet and a little bit spicy. Grilled pineapple and chipotle cauliflower really pair well in this version of cauliflower al pastor.

Cauliflower al Pastor

1 large head cauliflower

3 garlic cloves, smashed

1 medium yellow onion, thinly sliced

½ cup Chipotle Vegenaise

2 tablespoons pineapple juice

2 tablespoons fresh lime juice

Freshly ground black pepper

2 tablespoons olive oil

2 teaspoons kosher or sea salt
