Preheat oven to 350°F.

In a small saucepan, mix together the margarine, brown sugar, corn syrup, and dates. Stir until the sugar dissolves and the mixture bubbles. Set aside.

In a large bowl, mix together the oats, flour, and baking soda. Pour in the sugar mixture, then add the apples and lemon juice.

Pour into an 8x8-inch pan lined with parchment paper. Top with the walnuts and bake for 12–15 minutes. Cut as desired.

Vanilla Thumbprints

Makes 18 cookies

How could I not include a vanilla variation of the utterly adorable thumbprint cookie? These are similar to a sugar cookie, but with a fudgy texture and a burst of fruit flavor. You can use any kind of jam you like.

⅓ cup canola oil

⅔ cup sugar

¼ cup soy milk

1 teaspoon vanilla extract

1 ¾ cups flour

1 teaspoon baking powder

⅛ teaspoon salt

3–4 tablespoons jam, your choice
