CHEESY POPCORN

Not only is popcorn fun to eat, but it’s super healthy. Corn is another whole grain that is rich in vitamins, minerals and antioxidants and is one of the world’s best sources of fiber. It’s good for heart health, digestive health and reduces the risk of developing many diseases. So how can it get any better? With a hit of nooch! It’s called “cheesy” popcorn for a reason!

Serves 4

1 tbsp (15 ml) melted refined coconut oil

½ cup (96 g) popcorn kernels

4 tbsp (56 g) vegan butter

2 tbsp (10 g) nutritional yeast, plus more to top it off, if desired

1 tsp salt

Add the coconut oil to a deep pot that has a cover. Add the popcorn kernels and shake to distribute them across the bottom of the pot. Cover the pot and turn the heat to medium. The kernels will start to pop in a few minutes. As they pop, shake the pot a few times. When you don’t hear any more popping, the popcorn is done, anywhere from 7 to 10 minutes.

In the meantime, add the butter to a small saucepan. Cook over low heat until it has melted.

Drizzle the butter over the popcorn and sprinkle with the nutritional yeast and salt. Toss around to coat all of the popcorn as evenly as you can. Top it off with more nutritional yeast, if desired.

WHAT’S THE STORY WITH MELTED REFINED COCONUT OIL?

Refined coconut oil is neutral in flavor and aroma, as opposed to unrefined coconut oil, which smells and tastes like coconut. Refined coconut oil is the way to go when you don’t want any coconut flavor in your recipe. And because of the makeup of the fatty acids in coconut oil, it’s solid and bright white at room temperature, about 68°F (20°C). When the temperature hits about 78°F (26°C), the coconut oil melts and becomes crystal clear. Measure the amount you need for a recipe after it has melted because the conversion from solid to liquid is not always exact. If your coconut oil is solid when you are ready to use it, just set it in some warm water or near a source of warm air. The change from solid to liquid (and back again) will not affect the oil in any way.
