The wonderful book La Cucina Maremmana by Aldo Santini contains culinary lore, commentary, and recipes for traditional dishes served at restaurants throughout the Maremma, including the delectable chestnut tortelli that sustained Alessandra and me through the night in the Lamone woods.

Santini wonders if these tortelli might trace their origins back to the Etruscans who first settled in the region, the cradle of Italy’s most ancient civilization. Eating this dish by candlelight, there in Saturnia with its thousand-year-old ruins, its necropolises, the atmosphere certainly seems evocative enough to support the claim. Santini tells his readers to think whatever they’d like; the Etruscans have been credited for far grander accomplishments on even less evidence.

Like most Italian cookbooks, La Cucina Maremmana lists ingredients, but doesn’t give quantities. Here are the proportions I’ve worked out to recreate I Due Cippi’s signature pasta dish in my own kitchen each autumn.
