15. Jamaican Hot Curry Sauce

Inspired by the island in the tropics made with all spices and seasonings well known on the island. The aroma of this sauce will have you “jammin.”

Cooking Time: 10 minutes

Makes: One 16 oz. Jar

List of Ingredients:

Scotch Bonnet Pepper (1 doz.)

Indian Curry Powder (2 tsp.)

Oil (¼ cup)

Scallion (2 stalks)

Onion (2)

Salt (1 tsp.)

Vinegar (½ cup)

Methods:

Put oil in a saucepan and heat over a medium flame. Then add curry to the oil, stirring regularly. Allow curry to cook in oil for about two minutes until curry gets dark.

Add all other ingredients except vinegar and allow to cook. Remove pan from flame and add vinegar, cover pot and allow to set. Strain into a glass jar and refrigerate. Heat again when using.
