Instructions:
Preheat the oven to 35 degrees F. You will also need to grease a loaf pan, bread pan and set it aside.
Do steam the spinach just a few minutes over boiling water, do not cook them in oil in the skillet as we usually recommend.
Make sure you do squeeze out all the excess water from the spinach and set aside.
In a food processor do place the sunflower seeds, garlic and parsley.
Activate for a few minutes. Add the spinach and activate again.
You will be left with a very crumbly mixture. Pour in a bowl and mix with the eggs.
Pour the final mixture into the loaf pan and bake in the oven for about 25 to 30 minutes.
Let the bread cool down and cut into slices.
Use it for your sandwiches or use it with your next healthy dip recipe.
You will surprise how good this bread will taste! I sometimes eat it just as is after toasting with a little butter on it.
