Dandelion and Potato Hash

2 tablespoons horseradish

1 medium shallot, minced

Salt

Pepper

8 cups chopped dandelion leaves, cooked

2 cups hash browns

3 tablespoons olive oil

1. In a large bowl, stir together the horseradish, shallot, and a little salt and pepper. Stir in the dandelion leaves (cooled) and hash browns.

3. Pour the oil in a skillet placed over medium heat. Once warmed, add the leaf mixture, spread evenly on the bottom of the skillet. Cook, stirring every 2 or 3 minutes then spreading the mixture out evenly again, until the hash browns turn crisp and golden.
