INSTRUCTIONS:
In a large stock pot or Dutch oven, heat oil to medium.
Add the potatoes and sauté about 2 minutes before adding the onion, fennel, ground ginger, cumin, and salt.
Sauté veggies until softened, about 10 minutes.
Add the chicken broth and bring to a full boil. Reduce heat to a simmer and cook covered for 15 minutes, or until vegetables are softened and cooked all the way through.
While the soup is simmering, put your oven on the high broil setting.
Place the two sausages in a casserole dish and broil them on one side for 5 minutes (or until browned and crispy) before flipping them to the other side and broiling an additional 5 minutes, or until cooked all the way through (you can check whether the sausage is cooked through by poking it with your finger. If the sausage feels firm, it is cooked).
Allow the sausages to cool enough to handle and then slice them. Add the sausage to the soup.
Add the chopped kale leaves and stir them into the soup. Cook covered until leaves have wilted and are softened, about 5 minutes.
Serve soup with crusty rustic bread.
