Directions:

1. Combine all ingredients in a large microwavable mug or small bowl and stir thoroughly

2. The muffin will rise so there should be space left at the top

3. Top the batter with sugar and cook on high for 3 minutes or until batter bubbles

4. Remove from the microwave and set aside for 3-4 minutes before eating

Microwave apple crumble

This recipe differs from the first one for apple crumble as it uses coconut to enhance the flavour of the apples. Serve this with some whipped topping or your favourite ice cream.
