Pumpkin Steel-Cut Oats

Ingredients
3 cups water
1 cup steel-cut oats
½ cup canned pumpkin purée
¼ cup pumpkin seeds (pepitas)
2 tablespoons maple syrup
Pinch salt
Directions
In a large saucepan, bring the water to a boil.
Add the oats, stir, and reduce the heat to low. Simmer until the oats are soft, 20 to 30 minutes, continuing to stir occasionally.
Stir in the pumpkin purée and continue cooking on low for 3 to 5 minutes longer. Stir in the pumpkin seeds and maple syrup, and season with the salt.
Divide the oatmeal into 4 single-serving containers. Let cool before sealing the lids.
Place the airtight containers in the refrigerator for 5 days or freeze for up to 3 months. To thaw, refrigerate overnight. Reheat in the microwave for 2½ minutes or in a skillet over medium-high heat for 6 to 8 minutes.
